Biltong is a magnificent South African delicacy (not that we're biased, mind!). We ensure that we source only British, traceable and quality assured meat giving us a tender, flavourful raw product even before we start to make the biltong. The meat is traditionally flavoured with coriander, salt & black pepper (along with a tiny amount of chemical preservative & other natural preservatives to ensure food safety) and then air dried for between 3 - 6 days depending of the size of the pieces of meat. So in answer to your question, yes, it isn't cooked but it is preserved, air dried in low temperature, controlled conditions and we follow recommended processes to ensure a product that is not only as safe as possible but incredibly tasty.
Biltong is eaten as you would peanuts - it's a slighty salty, chewy snack. But it is particularly great eaten whilst relaxing with friends with a cold drink or even a beer.
Nutritional information for medium biltong is as follows: 4gr fat, 48gr protein, 4gr salt and 256kcal per 100gr. As can be seen, biltong is an excellent low carbohydrate, high protein snack and a typical 50gr snack portion is perfect for a mid-meal snack of approximately 130kcal. Low temperature air drying is far superior to cooking in terms of preserving trace vitamins & minerals and these vitamins & minerals are present in the biltong in higher concentrations than in cooked or even raw meat. Always bear in mind though that biltong does contain a relatively high concentration of salt (used for flavour and as a natural preservative) so that mid-meal 50gr snack contains around 2gr salt.
